Spinach, Cheddar, Eggs on Toast

This is one of my favorite ways to use spinach. The more fresh spinach I pile onto the sandwich, the more it seems to balance out the fat from the eggs and cheese, and the butter that I fry them in.

Ingredients and Preparation

Spinach (Whole leaves)
2 Eggs (fried)
2 or 3 slices of extra sharp cheddar

Wash a generous handful of spinach and set aside. Slice up the cheddar and set on your plate. Fry the eggs to your liking. After flipping the eggs, place the two or three slices of cheddar on top. Toast 2 slices of bread. Place the eggs and spinach on the toast and turn it into a sandwich. Delicious!
