Arugula & Spinach Salad

I enjoyed this salad as part of a lunch with Stefan, Meave, and my parents. It’s easy to adapt according to the greens that are available. Although its great with spinach and arugula, you could easily use baby red russian kale, tatsoi, or mustard greens. The walnuts and dried cranberries happen to go very well with arugula and spinach. Enjoy the variations!

Ingredients & Preparation:

Arugula
Spinach
1 Carrot
2 Radishes
1 Sweet Pepper
1 Cucumber
1 Apple
1/2 cup crushed walnuts
1/2 cup dried cranberries
1/4 cup feta cheese

Wash the arugula and spinach, and dry in a salad spinner. Scrub the carrot and radishes, and slice thinly. Slice the pepper and the cucumber. Slice the apple into bite size pieces. Toss all into a salad bowl. Top with crushed walnuts, dried cranberries, and crumbled feta cheese.

Note* I made a simple dressing of balsamic vinegar and olive oil. In a small Ball Jar, I combined 2 parts olive oil with 1 part balsamic, and added a little salt and pepper.
