Roasted Delicata Fries

If you like sweet potato fries you’ll love Roasted Delicata Fries. I like eating it as a side with…anything. The secret about this little winter squash is that you can eat the skin. Try it!


  • 1 Delicata Squash
  • Olive Oil
  • Salt & Pepper


1. Cut Delicata in half, remove seeds (save for toasting), and slice into half moon shapes.

2. Coat baking sheet with a generous amount of olive oil and scatter the squash pieces over it. Cover with salt and pepper.


3. Bake uncovered at 400F for 25 min to a half hour or until browned. After the first 15 minutes it’s a good idea to take it out of the oven once and stir around the squash.
