2 cups shredded zucchini or yellow squash
1 cup chopped onion
1 tsp salt
1 tsp pepper
1/2 cup flour
cooking oil (suitable for high heat)
Mix together the summer squash, onion, egg, salt, and pepper.
Stir in the flour.
Spoon tablespoonfuls of the mixture into hot oil and fry for 3 minutes on each side.
EAT AND BE HAPPY.
